The Rack of Lamb Co. - French Rack Machine is a semi-automatic machine to hygienically strip soft material from the bone of lamb, veal or pork racks, chilled or semi-frozen, presented to it, to create the traditional French Rack cut from the ribs of lamb, veal or pork.
It functions by directing jets of very high pressure water onto the item to be stripped in a controlled cycle.
